Sweet Potato Fries
Amazing appetizer, snack and side dish!

- 2 medium sweet potatoes
- Olive oil
- Sea salt
- Wash and dry the skins of the sweet potatoes. If necessary, cut off the very ends on each side to have them clean. Cut the potatoes vertically into half inch cubed fries. Place them in a bowl and drizzle them with olive oil so they are lightly coated but not drenched. Sprinkle sea salt and mix. Place them on top of a metal cooling rack on a cookie sheet. Place in a preheated oven at 400 and cook for 40-60 minutes while turning half way through.
- Optional: Sprinkle with Cajun seasoning or garlic powder in addition to the sea salt.
