Sweet Potato Fries

Sweet Potato Fries
Amazing appetizer, snack and side dish!

Ingredients
  1. 2 medium sweet potatoes
  2. Olive oil
  3. Sea salt
Instructions
  1. Wash and dry the skins of the sweet potatoes. If necessary, cut off the very ends on each side to have them clean. Cut the potatoes vertically into half inch cubed fries. Place them in a bowl and drizzle them with olive oil so they are lightly coated but not drenched. Sprinkle sea salt and mix. Place them on top of a metal cooling rack on a cookie sheet. Place in a preheated oven at 400 and cook for 40-60 minutes while turning half way through.
Notes
  1. Optional: Sprinkle with Cajun seasoning or garlic powder in addition to the sea salt.

Eggplant Pizza

Ingredients
  1. 1 large eggplant (can use Japanese eggplants if making them as hors d’oeuvres)
  2. Pesto sauce from my website
  3. Olive oil
  4. Cherry tomatoes
Instructions
  1. Cut eggplant rounds to ½” slices with skin on
  2. Brush lightly with olive oil and grill both sides until they are soft but not falling apart.
  3. Place a tablespoon of room temperature or slightly heated pesto sauce on each eggplant round.
  4. Cut cherry tomato in half and place on top of the pesto.
Notes
  1. Can be served warm or at room temperature.
