  1. 6 tablespoons unsalted organic butter
  2. 8 ounces bittersweet chocolate (Enjoy Life is good)
  3. 2/3 cup coconut sugar
  4. 1/2 teaspoon coarse Celtic sea salt
  5. 1 teaspoon vanilla extract
  6. 2 large pastured eggs
  7. 1/3 cup and 2 teaspoons coconut flour
  1. Preheat oven to 350 and adjust the rack to the middle position.
  2. Butter an 8” glass square pan.
  3. Place the butter and chocolate in the bowl of a double boiler.
  4. Melt over low heat.
  5. Remove chocolate mixture form heat and whisk in sugar, sea salt, and vanilla extract.
  6. Whisk in eggs one at a time. Whisk in coconut flour.
  7. Let the batter sit for 5 minutes.
  8. Pour the batter into the buttered baking dish and smooth into an even layer.
  9. Bake for 25-30 minutes until edges are just pulling away from the sides and middle is still just a little moist.
  10. Cool and then cut into squares.
  11. Store in an airtight container for up to 3 days.
