Thai Salad Dressing

Ingredients:
~ 4 tablespoons fresh lime juice
~ 6 tablespoons olive oil
~ 1 tablespoon sesame oil
~ 1 tablespoon coconut amino acids or gluten free soy sauce
~1 tablespoon fresh ginger, minced
~ ½ garlic clove, minced
~ 1 fresh red chili pepper, deseeded and sliced

Avocado and Spinach Dip

Ingredients:
~ 1 ripe avocado
~5 cups of organic spinach
~1/2 small white organic onion
~2 garlic cloves
~1/2 teaspoon Celtic sea salt
~juice of 1 lemon

Directions:

Place all ingredients into food processor until blended

Tasty ginger dressing - great to toss in salads and dip fresh veggies.

  1. 1/3 cup olive oil
  2. 1/8 cup rice vinegar
  3. 1/2 tsp honey
  4. 10 raw cashews
  5. 1 inch fresh ginger (peeled)
  6. 1 tbs Braggs amino acid
  7. 8-10 mandarin orange pieces
Instructions
  1. Place all ingredients into food processor and blend until smooth
  2. Pour over your favorite salad or dip fresh veggies
  3. Enjoy!

  1. 6 tbsp cashew butter
  2. 6 tbsp grapeseed oil
  3. 3 tbsp lemon juice
  4. sea salt
Instructions
  1. Whisk butter, lemon juice and salt together
  2. Slowly add the oil until combined
Notes
  1. This is a great dressing to use for digging veggies, over salads and with my baked herb and pistachio falafel

  1. 2 small avocados
  2. 3/4 cup water
  3. 1/4 cup freshly squeezed lime juice
  4. 1 Jalapeno pepper, Stemmed, seeded if desired
  5. 1 garlic clove, peeled
  6. 1 small handful fresh cilantro
  7. 1/2 teaspoon sea salt

Garlic Rosemary White Bean Dip

Ingredients
  1. 3 cups cooked white beans (cannelini, navy or great northern)
  2. 1/4 cup extra virgin olive oil
  3. 1 large lemon, juiced (about 1/4 cup)
  4. 1 to 2 cloves garlic, peeled and coarsely chopped
  5. 1 tablespoon chopped fresh rosemary
  6. 1 teaspoon Herbamare or sea salt
  7. reserved bean cooking liquid as needed
Instructions
  1. Place all ingredients, except bean cooking liquid, into a food processor fitted with the "s" blade. Process until very smooth and creamy adding bean cooking liquid as necessary to reach desired consistency (start by adding a tablespoon or so at a time).
  2. Chill until ready to serve. The flavors become more pronounced as the bean dip ages in the fridge.

  1. 1 small roasted beet, skin removed
  2. 1-2 cups olive oil
  3. 1/4 - 1/2 cup white champagne vinegar (can substitute with other vinegars)
  4. 1-2 tablespoons dijon mustard
  5. 1 large shallot
  6. 2-3 garlic cloves
  7. 1 teaspoon honey
  8. salt and pepper to taste
Instructions
  1. In a mini chopper or blender, mix together all ingredients and enjoy!
