Thai Salad with Sesame Ginger Dressing

~4-6 cups greens (I use red leaf lettuce)

~1 cup carrots, shredded

~1 cup purple cabbage, shredded

~1 cup napa cabbage, shredded

~1 cup cucumber, diced or julienned

~1 cup cilantro, chopped

~Sprinkle of black and white sesame seeds

Optional: 1/2 cup cashews or organic peanuts, roasted


Sesame Ginger Dressing:

~1/2 cup sesame oil

~2 tablespoons almond or organic peanut butter

~1/2 up coconut aminos

~1/2" fresh ginger


For Salad:

Place all salad ingredients into a bowl and mix with dressing.

Can add shredded chicken or shrimp


For Sesame Ginger Dressing:

Place all ingredients into a food processor or blender and blend until smooth.
