Spinach Salad

  1. ~1 small bag or plastic container of fresh, organic spinach
  2. ~6-8 large white mushrooms (thinly sliced)
  3. ~1 15 oz can garbanzo beans (drained and rinsed)
  4. ~1/2 cup chopped red onions
  5. ~salt and pepper to taste
  6. ~1/4 cup olive oil or avocado oil
  1. combine all ingredients except spinach in a large bowl
  2. add oil, salt and pepper and optional Italian herbs
  3. let sit for 15- 30 minutes to soften
  4. add spinach, mix and serve
