Ingredients
  1. 1 small roasted beet, skin removed
  2. 1-2 cups olive oil
  3. 1/4 - 1/2 cup white champagne vinegar (can substitute with other vinegars)
  4. 1-2 tablespoons dijon mustard
  5. 1 large shallot
  6. 2-3 garlic cloves
  7. 1 teaspoon honey
  8. salt and pepper to taste
Instructions
  1. In a mini chopper or blender, mix together all ingredients and enjoy!
