~2 Organic ripe bananas
~1/4 teaspoon vanilla extract
~1/4 teaspoon cinnamon
~Coconut oil or ghee
Berries or unsweetened coconut flakes for garnish
In a blender or food processor, blend all ingredients together until smooth.
In a large skillet on medium heat, melt coconut oil or ghee and place pancake mixture in circles without touching. Cook 3-5 minutes, or until bubbles form on the surface. Flip pancakes and cook another 1-2 minutes or until cooked through. Repeat with remaining batter.
