Asian Salad

ingredients:
For Salad:
- 2 large heads of red leaf lettuce, chopped
 - 2 cups of red cabbage, chopped
 - 2-3 green onions, chopped
 - 1 red pepper, diced
 - 1 yellow or orange pepper, diced
 - Handful of Chinese snow peas, julienned
 - 2 pickling cucumbers, sliced
 - 1-2 small cans of mandarin oranges, rinsed and drained
 - 1/2 cup roasted cashews or slivered almonds
 - Black and white sesame seeds
 - Can add chicken or shrimp
 
For Dressing:
- 3/4 cup fresh lemon juice
 - 3/4 cup seasoned rice vinegar
 - 2 1/2 tablespoons honey
 - dash pepper
 - 3 to 4 drops coconut aminos
 - 2 tablespoons sesame oil
 - 2 tablespoons olive oil
 
instructions:
- In a medium mixing bowl, add lemon juice, rice vinegar, honey, pepper, and coconut aminos.
 - Whisk in sesame oil and olive oil to emulsify. Toss desired amount of dressing into salad and enjoy!
