Chai Spiced Carrot and Millet Salad

ingredients:
- 1 pound carrots (approx. 6 large carrots), peeled
- 1 cup slice red onion, sliced
- 1 ½ tablespoon olive oil
- 4 teaspoons chai spice (I use Countertop Chai)
- 3/4 cup uncooked millet
- 1/2 cup roasted pistachios (shelled) or sliced almonds
- 1/2 cup pomegranate seeds
- 1/2 cup flat leaf parsley, minced
- 1/4 tablespoon fresh mint leaves, minced
- Juice from 1 lemon
- 2 tablespoons olive oil
- Celtic sea salt and pepper to taste
