Pesto Cauliflower Rice

ingredients:

  • 2 pounds (32 ounces) organic cauliflower rice raw
  • 1 tablespoon coconut oil
  • 1/2 cup white onion, diced
  • 10 mini zucchinis (or 2 regular sized), sliced into 1/4" circles
  • 3/4 cup pesto
  • sea salt to taste

instructions:

  • In a large pan, melt coconut oil and add onion and zucchini.  Stirring frequently for 2-3 minutes.  
  • Add cauliflower rice and stir until cooked.  
  • Add pesto and sea salt and serve.

Serves 6-8
